    *Nigerian Vegetable Soup (Efo Riro)*

     

    *Ingredients:*

     

    - 2 cups assorted vegetables (amaranth, spinach, waterleaf)

    - 1 cup locust beans (iru)

    - 1/2 cup palm oil

    - 1 large onion, chopped

    - 2 Scotch bonnet peppers, chopped (optional)

    - 1 tablespoon ground crayfish

    - 1 teaspoon ground pepper

    - Salt to taste

    - 2 cups beef or chicken stock

    - 1/4 cup smoked fish or meat (optional)

     

    *Instructions:*

     

    1. *Prepare the Locust Beans*: Rinse and blend the locust beans with a little water until smooth.

    2. *Sauté Onions and Peppers*: Heat palm oil in a pot, add chopped onions and Scotch bonnet peppers, and sauté until softened.

    3. *Add Stock and Seasonings*: Add beef or chicken stock, ground crayfish, ground pepper, and salt. Stir well.

    4. *Add Vegetables*: Add the assorted vegetables and smoked fish or meat (if using). Cook until the vegetables are tender.

    5. *Finish with Locust Beans*: Stir in the blended locust beans and simmer for a few minutes.

    6. *Serve*: Enjoy with your favorite swallow (e.g., fufu, eba, or pounded yam).

    - Adjust the amount of pepper to your taste.

    - Use a variety of vegetables for a richer flavor.

    - Serve with a side of plantains or yams for a complete meal.
