Production of Bread Bread production turns simple ingredients into a staple food through fermentation and baking. The main ingredients are flour, water, yeast, salt, and sometimes sugar or fat. 1. Mixing Flour and water are mixed with yeast, salt, and other ingredients. Mixing forms gluten, a protein network that traps gas. This gives bread its structure and chewiness. Mixing lasts 5-10 minutes until the dough is smooth and elastic. 2. Fermentation/Bulk Proofing The dough rests 1-2 hours. Yeast feeds on sugars and produces carbon dioxide gas + alcohol. The gas gets trapped by gluten, making the dough rise. This also develops flavor. Temperature is kept around 25-30°C for best results. 3. Dividing & Shaping The risen dough is divided into pieces and shaped into loaves, rolls, or buns. Shaping tightens the gluten so gas stays inside during baking. 4. Proofing Shaped dough rests again for 30-60 minutes. This “final proof” lets it rise more. If under-proofed, bread will be dense. If over-proofed, it collapses. 5. Baking Dough is baked at 200-240°C for 20-45 minutes depending on size. Heat kills yeast, sets gluten and starch, and creates a brown crust through the Maillard reaction. Steam is sometimes added for a crisp crust. 6. Cooling & Packaging Bread must cool 1-2 hours before slicing. Cooling stops cooking and prevents sogginess. Then it’s sliced and packaged to stay fresh.
