It is an astonishing but undeniable truth that ninety-five percent of the food we eat relies directly or indirectly on the soil beneath our feet. From the grains that feed global livestock to the vibrant fruits and vegetables on our dinner tables, healthy soil provides the foundational nutrients, minerals, and water filtration systems necessary to sustain human life. It is the literal anchor of global food security, acting as a massive, natural pantry that fuels the global population. Yet, we treat this priceless lifeline with alarming carelessness. When soil is healthy, it is packed with essential micronutrients like zinc, iron, and calcium. Plants absorb these elements, which in turn nourish humans. However, decades of intensive chemical farming, overgrazing, and monocropping have severely depleted these nutrients.
